Crab Fried Rice

Crab Fried Rice is a popular Thai dish. Unlike other fried rice, the Crab Fried Rice focuses on the crab and less on the typical vegetables used such as peas, carrots, onions, and so forth. Typically, it’s slightly on the sweeter side but for this recipe, I don’t use any sugar but feel free to do so if you prefer your dishes a bit sweet. For this recipe, I used Maryland steamed crabs that we ate as a family. I used the leftover crabs the next day and peeled it to make this dish, so the crab meat already had some seasoning on it. It was so tempting to eat it before making this dish! 

The flavor profile of this dish is mild and simple. For those who enjoy a bit of a kick, this dish tastes great with some garlic chili oil. It goes really well together. When creating this dish, be sure to use good quality chunky crab meat. The crab should be the star of this recipe. 

For rice, feel free to use either freshly cooked or a refrigerated day old rice. I personally use fresh rice to cook my fried rice instead of leftover rice but that’s a personal preference. There’s a common misconception that a refrigerated day-old rice is better but that’s simply not true. No restaurant that cooks fried rice ever uses cold day-old rice. It’s all fresh. For making fried rice, to prevent fresh rice from getting soggy, just add slightly less water when cooking it. Or if the rice is already made, and it’s a bit on the wetter side, fluff it with the rice spatula and let it sit out a bit to release excess steam.

Ingredients

  • 3 cups cooked medium grain rice (jasmine rice works as well)

  • 12 oz of crab meat

  • 2 tbsp of avocado oil (divided in 2; any neutral oil okay)

  • 2 eggs (scrambled)

  • 3 garlic (minced)

  • 1 scallion (chopped)

  • ⅓ cup chopped cilantro

  • 1-1.5 tbsp melted salted butter

  • 2 tsp-1 tbsp soy sauce

  • 2 tsp-1 tbsp fish sauce

  • pinches of seasoned salt to taste

  • pinch of Kosher salt and black pepper to taste

  • sliced jalapeno peppers (optional)

  • serve with chili oil (optional but definitely I recommended for those who love some spice!)

  • garnish: cilantro sprig

Directions

  • Chop all of your aromatics - scallions, cilantro, and mince cloves of garlic. Set it aside.
  • In a small bowl, scramble 2 eggs together and in a medium pan, add avocado oil and cook the scrambled eggs for about 2 mins.
  • In a medium pan, add avocado oil and mix minced garlic and scallions for about 1.5 minute. Then, add cooked rice, butter, fish sauce, soy sauce, pinch of salt and pepper and mix ingredients together well on medium low to low heat for about 4 minutes..
  • Add in the cooked scrambled eggs and crab meat and stir for about 2 minutes. Be sure to stir gently to avoid breaking the crab meat apart.
  • Add chopped cilantro and seasoned salt to taste and cook for another 2 minutes or so.
  • Garnish with a sprig of cilantro and enjoy!
