SPAM Fried Rice

SERVING SIZE: 2

Have you ever tried SPAM Fried Rice? If you haven’t, you have to try it! It has a delicious flavor profile of umami, salt, and a hint of sweetness. It’s meaty, flavorful and satisfying. SPAM can be eaten during breakfast, lunch, dinner, and as a snack.

So, where did SPAM come from?

SPAM originated in 1937 and was created in the States, in Minnesota. SPAM is short for Special Processed American Meat. This mystery canned meat was created around the time of the Great Depression as a more affordable alternative to meat. Today, it’s sold in 44 countries worldwide. There are so many different flavors that you can choose from: Bacon, Black Pepper, Cheese, Chorizo, Garlic, Hickory Smoke, Hot and Spicy, Jalapeno, Lite, Teriyaki, Tocino, Turkey, Portuguese Sausage, 25% Less Sodium, and the all-time favorite, Original. They’ve even had a Limited Edition Pumpkin Spice and Figgy Pudding. Have you tried these? If so, which ones have you tried? For this recipe, we’re going to use the Original SPAM. This is usually my go-to for cooking anything that involves using SPAM.

For this recipe, we’re going to use ½ can of SPAM and cut it up into rectangular pieces to make the fried rice a bit meatier. Along with everything else, we’re also going to butter and oyster sauce to liven the flavor of all the ingredients.

Recipe by crabcakesandkimchi

Ingredients

  • 1/2 can of SPAM (cut into rectangular pieces)

  • 2 Tbsp of avocado oil (divided in 2; any neutral oil okay)

  • 2 eggs (scrambled)

  • 2.5 cups cooked rice

  • ¼ large red onions (diced)

  • ⅓ red bell peppers (diced)

  • ⅓ thawed peas

  • ⅓ stalk of julienne cut carrots

  • 3 garlic (minced)

  • 1 scallion

  • 1 tbsp melted butter

  • 1 tbsp soy sauce

  • 1 tbsp oyster sauce

  • pinch kosher salt and black pepper (optional; I only use black pepper for this recipe)

Directions

  • Cut and dice vegetables - red bell peppers, large red onions, scallions, carrots, and minced garlic.
  • Cut half a can of SPAM and cut it into rectangular pieces.
  • In a small bowl, scramble 2 eggs and set it aside.
  • In a pan, add 1 tbsp of avocado oil (or any neutral oil) and add scrambled eggs and stir for about a minute on medium heat and set it aside once the eggs are cooked.
  • Add the cut SPAM into the pan and add 1 tbsp of soy sauce and 1 tbsp of oyster sauce and stir on medium for a minute to minute and a half and set it aside
  • Add in the other tablespoon of avocado oil in the pan and place chopped onions and carrots and stir. Then, add in red bell peppers, thawed green peas, garlic and continue to stir for another minute or minute and a half on medium.
  • Then, add in chopped scallions, rice, soy sauce, SPAM, eggs, pinch of salt and black pepper to taste, and butter. Then, stir for about 4 minutes or until all the ingredients are mixed well together. Once it’s done, plate and enjoy!

Notes

  • For those who prefer their food a bit less salty, use 25% less sodium SPAM and low-sodium soy sauce.
  • For those who prefer a bit of a kick, add a bit of chili oil or chili flakes.
